The smokey flavor on top of the classic recipe works to create the ultimate appetizer sure to send your tastebuds on a journey to their primal beginnings. Just--without the danger of being chomped on by a dinosaur.

Ingredients

  • 1/2 cup all-purpose flour
  • 4 tsp Sucklebusters SPG
  • 5 hard boiled eggs peeled
  • 1 lb seasoned bulk sausage
  • 2 eggs beaten
  • 1 cup dry bread crumbs

Instructions

  1. Place 1 cup of water and 5 eggs in the Instant Pot and close the lid securely. Set the Instant Pot to high pressure for 5 minutes, then allow 5 minutes for the Instant Pot to heat up and cook. After cooking, carefully release the pressure from the Instant Pot transfer the boiled eggs to an ice bath, and let them cool for 5 minutes.
  2. In a bowl, whisk 2 eggs to create an egg wash for later use after we wrap the eggs in sausage. Then, In another bowl, combine the flour and 1 tablespoon of Sucklebuster SPG seasoning. Stir to ensure even distribution of the seasoning.
  3. Once the boiled eggs have cooled, peel them and lightly wet them with water. This will aid in wrapping the eggs with sausage. Divide the sausage into 5 equal-size balls and then flatten each sausage ball into a thin layer. Carefully encase each boiled egg with the sausage, smoothing the seams to create an even wrapping around the egg.
  4. Dip each sausage-covered egg into the beaten egg wash, allowing the excess to drain off. Next, dredge the sausage-covered egg in the seasoned flour mixture. Place the coated eggs on a plate and refrigerate them, uncovered, for 1 to 2 hours. The cooling will help the coating to set.
  5. When ready to cook, preheat your smoker or oven to 180°F (82°C). Smoke or cook the seasoned and sausage-covered eggs for 1 hour at the preheated temperature. After 1 hour, remove the eggs and increase the smoker/oven temperature to 375°F (190°C). Return the eggs to the grill grates or oven and cook for an additional 30 minutes. Cook until the outside is golden brown and the sausage is fully cooked. Enjoy your delicious Dinosaur Eggs!
