Walleye Tacos Recipe

These delicious tacos are made with fresh walleye, grilled to perfection and topped with a sweet and tangy pineapple salsa. Try out this recipe for a quick and easy way to enjoy the fresh flavors of summer!

  1. Finely chop cilantro, bell pepper, pineapple, tomato, and onion.
  2. In a large bowl, combine the pineapple, bell pepper, tomato, cilantro, onion, lime juice, and jalapeño. Season with salt and pepper to taste.
  3. Season the walleye filets on both sides with Hey Grill Hey Fish Rub.
  4. Preheat the Flatrock griddle to medium-low heat. Then place the walleye filets on the griddle and cook for 3-4 minutes per side, until they reach an internal temperature of 145°.
  5. While the fish is cooking, oil the open side of your griddle and place the flour tortillas on the griddle and lightly brown both sides. When you are finished cooking, bring your fish and tortillas inside and gather your pineapple salsa topping.
  6. To assemble the tacos, place a flour tortilla on a plate. Top with a piece of fish, some of the pineapple salsa, and a drizzle of Sriracha Aioli. Serve immediately.
