Hi-Country Jerky Seasonings are a unique blend of premium grade spices, salt, sugars, and cure, boldly formulated for seasoning stronger wild game meat and game birds. Our Jerky formulations emphasize slightly higher levels of sugars, or humectants, to help retain moisture longer, making softer, more pliable chewing jerky. Each kit contains one cure packet with only sodium nitrite on a small salt carrier so that the user can optionally omit the cure without compromising the overall seasoning of the jerky. For those who are MSG sensitive, several of the jerky seasonings have been formulated without any added monosodium glutamate. The instruction booklet contains complete step-by-step instructions to make both whole muscle and ground & formed jerky, along with a batch conversion chart for making smaller batches. An extensive Tips & Tricks section also addresses how to monitor internal temperatures of jerky, assuring food-safe shelf stable jerky, as well as tips for making jerky in a dehydrator, and more.
