Rather than using toothpicks to keep your bacon secured to the tenderloin while cooking, James suggests using spaghetti noodles. As the tenderloin cooks, the noodles will become softer, so you won’t end up with anything poking your gums—ouch. Just be sure to leave the ends sticking out slightly to prevent your bacon for falling off when grilling.

  1. Trim your tenderloin
  2. Set your grill to 300° F
  3. Layout your bacon with pieces touching but not overlapping
  4. Season the tenderloin with Kosmos Dirty Bird on both sides
  5. Roll the tenderloin up in bacon
  6. Break off spaghetti noodles and pin the bacon to the tenderloin
  7. Place a Fireboard probe in the thickest part of the tenderloin
  8. When the tenderloins reach 120° F, crank up the grill to 400° F to crisp the bacon
  9. When the Fireboard reads 145° F pull the tenderloins from the grill
  10. Double-check temperature with a Thermapen
