Prime Rib Recipe for Christmas

This prime rib is a really simple recipe. Just brine it with a generous amount of kosher salt for 4 full days. After 4 days, pull the prime rib from the refrigerator, generously season it with Boars Night Out, and grill it on the Traeger until it hits 123°. Turn up the temperature to 500𝆩 and sear on both sides for 1 minute. Let it rest and serve. Expert tip: For a cheaper option, use a Manhattan roast from your local butcher shop. All you have to do is ask them to trim out the tendon and they will likely do it for you!

  1. Trim up some of the exterior fat from the roast.
  2. Truss the prime rib with butcher's twine so the roast cooks evenly.
  3. Cover the entire roast with a generous amount of kosher salt.
  4. Put the roast into a Drip EZ BBQ Prep Tub and let rest for 4 days in the refrigerator.
  5. After 4 days, pull the prime rib from the refrigerator.
  6. Season with Boars Night Out White Lightning (season generously on all sides). 
  7. Put it on the Traeger at 250°, and using the Traeger Meater Wireless Meat Thermometer, monitor the temperature. 
  8. Once it hits 123°, pull the prime rib and let it rest for 20 minutes. 
  9. Add the grill grates to the Traeger and turn up the temperature to 500𝆩 and sear it on both sides for 1-2 minute. 
  10. Cut off the twine and serve with Terrapin Ridge Farms Horseradish.
