Just 2 ingredients and you’re eating dinner. Whether you try out this easy 2 ingredient fish recipe on the Traeger or in the oven, it is sure to leave you wanting more. Start by arranging your walleye, or any white flaky fish, on a Cedar Grilling Plank, apply a very thin glaze of mayonnaise on the walleye, and lightly season the fish with SuckleBusters Lemon Pepper Garlic Seasoning. Set aside and begin preparing mushrooms by prepping the pan with butter by either wiping the stick of butter along the bottom of the pan or placing a few teaspoon-sized squares in the pan. Cap the mushrooms and fill the mushroom caps with cream cheese, then pile on a heaping amount of parmesan cheese, and place in the baking dish. You can choose to either grill the fish in a cast iron skillet with melted butter, or on a cedar plank. If you choose to cook on the cedar plank, be sure to presoak the plank prior to throwing the fish onto the grill. If on the cast iron skillet, bake for 5-10 minutes on the Traeger at 375°. If using the cedar plank, allow the fish to cook for about 30 minutes and wait for the fish to start separating and the layer of mayo to start to caramelize. While the fish is cooking, place the pan of stuffed mushrooms on the Traeger and allow them to cook for about 25-30 minutes, or until the mushrooms are tender and the filling is beginning to brown. Plate your fish and stuffed mushrooms with a slice of lemon and some dill for a beautiful and balanced meal.

  3. Lightly season the fish with SuckleBusters Lemon Pepper Garlic Seasoning
  4. Set aside and begin preparing mushrooms by prepping the pan with butter by either wiping the stick of butter along the bottom of the pan or placing a few teaspoon-sized squares in the pan.   
  5. Cap mushrooms by simply removing the cap from the stem. 
  6. Fill mushroom caps with cream cheese, pile with a heaping amount of parmesan cheese, and place in the baking dish.  
  7. Place fish on the grill in a cast iron skillet with melted butter. OR If cooking on the cedar plank, presoak the plank and throw the fish onto the grill. 
  8. If on the cast iron skillet, bake for 5-10 minutes on the Traeger at 375°. If using the cedar plank, allow the fish to cook for about 30 minutes and wait for the fish to start separating and the layer of mayo to start to caramelize.
