I reverse sear steaks until I get to the right temperature then sear the bad boys right at the fire. Not sure I’ll ever cook steaks another way. I start the cook with this plate already in so it’s very hot. All I do is remove the grates and put the steaks on the sear plate. 20 seconds, a 45 degree turn, flip an do the same on the other side.
