did 9 1/2 lbs of Moose and 4 1/2 lbs of pork butt and 1 lb of high temp cheddar cheese and it came out great. only thing is I put in the recommended amount of cure (used 3 five lb kits) and it was a bit too salty for me, will probably cut back on cure a little next batch and I liked the smaller casings that came in the kits
I recently made 5 lbs of summer sausage using Backwoods cured sausage seasonings kit. I will say that the sausage turned out very well and tasted pretty good following the directions properly. I would highly recommend others to purchase this item if they are beginners and do not have secret recipe. I will buy this again in the future.
Bagged 5 deer this season, and only used LEM products for processing the venison. Made 25 lbs. of Venison Bacon, 20 Lbs. of Venison Trail Bologna, 10 lbs. of Hickory Jerky and 10 lbs. of the Mesquite Jerky, finished off the season with 25 lbs. of Venison Summer Sausage, provided samples to family and friends who normally would not eat venison, much to my amaze these LEM products was a huge success and easy followed directions on each package. Cannot say enough about these products. THEY ARE GREAT.
First time making sausage of any type. Followed the directions and used the clear casings included. Added 1 Tbsp mustard seed per 5# batch. Cooked in oven @ 190 F to internal temperature of 160 F. Ice bath to cool and vacuum sealed all but 1 stick to sample. Tastes wonderful paired with a smoked gouda. Easy, and very good. Would buy again.
This is a wonderful product. Added the seasoning to a buffalo-pork mixture and followed the instructions. Once smoked, it is a real tasty summer sausage. This was my first time using this seasoning and has a great taste. I will use again.
The great thing about this kit is that it includes 4 packages of seasonings which seasons 5 lbs of meat. This means you can make smaller batches with out having to measure out and guess at proportions of seasonings. I started with a small 5lb batch. That was a mistake as we went through that really fast. Anyway, for the first 5 lb batch, I used 2.5 lbs of Venison, 2 lbs of ground Pork Butt and .5 lbs of ground bacon ends. (a friend suggested the bacon ends) Ground, mixed per package, left sit in airtight container over night. The next day I added 8oz of LEM Hi Temp Cheddar and smoked using apple wood. I have been told Hickory is also really good, but I had apple on hand and no hickory. It turned out AWESOME. This is where I say I will be using this again, well, my family has let me know if I plan to stay here I have to use it again and SOON. :-) Excellent flavor easy to read instructions and pleasure to work with.
We had tried this from a friend, so when we had deer to process, we decided to order this bologna trail kit and try it. We Love the flavor and was a big hit. I plan on making more of this each year. A neighbor I gave a roll to, bought some and made some himself, just this week. Highly recommended.
First time making sausage so I ordered both the Summer sausage kit as well as the Trail Bologna kit. Both flavors are excellent and directions are good. I smoked the sausages in my electric smoker for about 10 hours and I did have some learning curve with the smoker and getting the meat to the correct internal temperature..all in all they came out great and taste wonderful. I added some mustard seed and garlic powder to the mix and made mine with moose meat with about 1/3 pork. I do not have a stuffer so stuffed these casings using my grinder attachment and also some by hand. This kit comes with 1 1/2 casings. Next time I will order the casings and the spice separately so I can get either the 2 1/2 or 4 casings, which will be much easier to stuff by hand. The small casings is my only complaint with this kit and hence 4 stars and not 5.
