I process a lot of animals and like to have the right knife for the right job, and I've invested in high-quality tools. For processing, I'm cutting through hair/fur, leg and neck joints, cutting across pelvic bones, and like to have a knife with a clip point so I can use my finger to guide it under the skin but protect the guts from puncturing. It's also nice if I don't have to care about the handle material -- I use a lot of bleach to keep my knife clean and sanitary while processing but that's super hard on wood handles and actually causes noticeable wear even on synthetic handles that use epoxy/fiberglass/linen layers. The custom knifemaker who made the folder that I usually use for processing appreciated how hard I use my knife the last time I stopped in.\n\nAfter getting frustrated with my incorrect tools that day, I took an hour off and found this one for $14 at WalMart. Great purchase. This inexpensive knife uses steel that holds a great edge for at least two rabbits but also sharpens up easily with a good leather strop plus polishing compound. Out of habit I usually do 5 strokes per side on a leather strop with green polishing compound to keep the edge clean between processing each animal, but this knife processed three rabbits with no discernable dulling before habit kicked in again. The main blade shape lets me use my finger to protect the cavity while opening it up. Both blades held up well cutting through fur and opening joints. I score across the pelvic bone to let me break open the girdle to remove stuff and it had no problem doing this over many many rabbits. The handles were easily grippable through the entire process even after everything got messy. And even though the grips appear to be some kind of plastic, the blades, bolsters, and grips all handled the regular bleach cleaning (plus a trip through the dishwasher when everything was done) just fine. Finally, while I don't usually carry a pocket knife that doesn't have a clip on the side, the rounded bolsters carry in my pocket very well. \n\nBottom line from someone who uses a knife heavily on a farm, this inexpensive knife does the jobs I need it to do perfectly well. It fits easily in the hand, the blade is a perfect size for processing small to medium size animals (up to coyote size). I wouldn't use it on deer or larger size animals only because it doesn't have a locking mechanism and I insist on that when working on animals where I won't be able to see my hands or what I might be pressing it into. On the other hand, the slipjoint spring is pleasantly stiff and shows no indication of accidentally closing during rough use as long as you're not being reckless. I have no idea how many cardboard boxes, tatami mats, wood carving experiments, or other random things it will cut through -- it appears to be just plain 420 stainless steel, but it's a really well-done execution of a clip point knife that will do what it should do at an inexpensive price point. The fit and function along with stainless steel blades that hold an edge well but also sharpen easily with just a strop make it an excellent knife.
