Christmas Prime Rib Recipe

Grab your ugly Christmas sweater and turn on the tunes.. It’s time to get in the holiday spirit with the king of beef cuts, prime rib!

  1. Trim up some of the exterior fat from the roast.
  2. Truss the prime rib with butcher's twine so the roast cooks evenly.
  3. Cover the entire roast with a generous amount of kosher salt.
  4. Put the roast into a Drip EZ BBQ Prep Tub and let rest for 4 days in the refrigerator.
  5. After 4 days, pull the prime rib from the refrigerator.
  6. Season with Boars Night Out White Lightning (season generously on all sides).
  7. Put it on the Traeger at 250°, and using the Traeger Meater Wireless Meat Thermometer, monitor the temperature.
  8. Once it hits 123°, pull the prime rib and let it rest for 20 minutes.
  9. Add the grill grates to the Traeger and turn up the temperature to 500𝆩 and sear it on both sides for 1-2 minutes.
  10. Cut off the twine and serve with Terrapin Ridge Farms Horseradish.
