I have been a fan of Backwoods seasoning mix for some time. I typically buy the Hot Breakfast mix and this year tried some Maple Breakfast. It was really good and next year, if I am fortunate to get another deer, I will equally divide my sausage between Hot Breakfast and Maple. I like a strong flavor so for both batches I use a 25 bag of seasoning for 20 lbs of sausage. My venison has a 25% blend of pork trimmings. Good Stuff. I would recommend this product to any deer hunter.
It seems the ingredients (spices) were scrimped on for this product. I bought the package for 25lbs. My first patch seemed pretty weak using the recommended amount per pound on package. On the second batch I made, I increased the amount by about 20%. The flavor is a bit stronger but, in both cases it seems a bit salty. I won't recommend it to friends or family.
I bought the 5 lb. mix I double grind my sausage meat add a cup of water then add the mix I use a mixer to mix it up to make sure all meat gets mix on it I then make patties and fry. Also Best good to make sausage gravy , fresh biscuits & eggs with potatoes. Randall
I ground up some boneless, skinless chicken thighs, mixed in some Breakfast sausage seasoning and a little bit of sage, and cooked the patties with nonstick spray in a skillet. They were a ringer for the overpriced but delicious Applegate brand chicken & sage breakfast sausages. If you’re looking for a lower calorie breakfast sausage option, you won’t be disappointed.
