Cooking directly on the grates definitely adds flavor. Though it doesn't call for it in the instructions, I brushed some olive oil on each side before putting face down on the grate. It helped prevent sticking and added a bit of flavor. It cooks fast so be sure to keep an eye on it to prevent burning. Having a pizza peel and/or tongs makes flipping easier. Our particular pizza toppings took longer to cook so I found that putting it back on the grill on a pizza stone over indirect heat prevented the bottom from getting too dark.
