I couldn't find my extra Forschner boning knife when it came time to process a moose so I bought one of these. The one that was available in Grand Forks was a thick blade type and is ideal for trimming and slicing big game for processing. Blade sharpens easily and holds an edge well. I prefer the Swiss made knives but this Brazilian made blade will serve you well for many, many years.
